The chef Rainer recommends...
White cheese dumplings, stuffed with strawberries
For 4 persons
100g soft butter
1 vanilla sugar
100g icing sugar
Grated lemon peel (1/2 lemon)
A pinch of salt
250g white cheese (curd)
- sweet crumbs (bread crumbs, roasted in butter with sugar and cinnamon)
- Strawberry sauce (mix fresh strawberries with sugar and some lemon juice)
1) Stir the butter with egg-yolks, vanilla sugar, lemon peel and salt
Add the white cheese and the flour, stir and put in the refrigerator for ½ hour
3) Form a roll of approx 4-5 cm diameter and cut slices of 1 cm thickness
Put half a strawberry in the middle of cach slice
Form a dumpling out of each slice (should be approx. like an apricot)
Put in boiling, salted water, and gently simmer for 8 minutes
Take out of the water, put on a towel and then coat with the sweet crumbs
Serve with icing sugar and strawberry sauce
